250g/9oz Odlums Self Raising Flour

2 Teaspoons ground Ginger

125g/4oz Treacle

125g/4oz Butter

175g/6oz Golden Syrup

1 Egg

2 large Bananas (mashed)


  1. Preheat oven to 160°C/325°F/Gas 3. Lightly grease and base line a 990g/2lb loaf tin.
  2. Put the treacle, butter and golden syrup into a saucepan over a low heat and melt.
  3. Put the flour and ginger into a bowl. Beat the egg and mashed bananas together.
  4. Add the treacle mixture and the egg mixture to the flour and mix well.
  5. Transfer to prepared tin and bake in centre of oven for 45 minutes to an hour, until risen and ‘firm’ to the touch.
  6. Remove from oven and leave in tin for 10 minutes, then turn onto wire tray to cool.
  7. Serve as is or with whipped cream or maple syrup.


The bread freezes very well.
