What you need:

  • 375g Odlums Self Raising Flour
  • 125g carton Natural Yoghurt
  • 125g Caster Sugar
  • 125g Sunflower Oil
  • 2 Eggs
  • Rind & Juice of 1 Orange

How to:

  1. Preheat oven to 150°C/300°F/Gas 2. Grease and line a 900g/2lb loaf tin with baking paper.
  2. Put yoghurt, sugar and oil into a bowl and mix, add the eggs and beat well.
  3. Gently stir in the flour and finally mix in the juice and rind of the orange.
  4. Transfer to the prepared tin and smooth top.
  5. Bake in a lower shelf position for about 1 hour until risen and golden brown.
  6. Remove from oven and leave cake in tin for about 10 minutes, then turn onto a wire tray to cool.
