450g/1lb Odlums Cream Plain Flour

225g/8oz Sugar

225g/8oz Shamrock Sultanas

175g/6oz Butter (room temp)

300ml/½pt Milk

Pinch Cinnamon (optional)

Pinch Nutmeg (optional)


  1. Preheat oven to 180°C/350°F/Gas 4. Grease and base line an 8” deep cake tin.
  2. Sieve the flour and spices, if used into a bowl. Rub in the butter until mixture resembles fine breadcrumbs.
  3. Add the sugar and mix well. Next mix in the sultanas. Add the milk and mix to a soft dough. Transfer to prepared tin and smooth top. Brush with a little milk if liked.
  4. Bake for about 1 hour or until risen and golden brown. Remove from oven and allow to remain in tin for about 15 minutes. Then turn onto a wire tray to cool completely. Store in an airtight container.


Regular milk can be replaced with Soya milk.
