75g/3oz Odlums Porridge Oatflakes
25g/1oz Caster Sugar
25g/1oz Butter
1 tablespoon Honey
3 Bananas (peeled and thickly sliced)
175g/6oz Fresh Fruit in season (Strawberries, Raspberries, Blackberries etc.)
Lemon Juice
4 tablespoons Greek Yogurt
Extra Honey for drizzling


  1. Preheat oven to 190°C/375°F/Gas 5. Line a flat baking sheet/tray with baking parchment.
  2. Sprinkle oats over prepared tin and scatter with the sugar. Dot with the butter and drizzle over the honey.
  3. Place in oven for about 10 minutes, until just toasted. Remove from oven and allow to cool – this will make the oats crisp! Break up and store in a sealed container until required.
  4. Place fruit and bananas into a bowl and sprinkle with lemon juice. Top the fruit with yogurt and finish with a scattering of the crumbled honey crisp. Finally, drizzle with a little extra honey.
