Ingredients

Pastry

225g/8oz Odlums Cream Flour

125g/4oz Margarine

Cold Water

Salt & Pepper

Filling

1 Onion (finely chopped)

1 Fillet Smoked Mackerel (flaked)

50g/2oz Button Mushrooms (chopped)

125g/4oz Grated Cheddar Cheese

300ml/½pt Milk

2 Eggs

Salt & Pepper

4 to 6 vine Tomatoes (halved)

Method

  1. Sieve flour, salt and pepper into a bowl. Coarsely rub in the margarine. Add sufficient water to make a soft dough.
  2. Lightly knead on a floured surface, roll out and use to line a 25cms/10” flan dish.
  3. Place onion, mackerel, mushrooms and cheese into the flan case. Arrange tomato slices on top.
  4. Beat eggs, milk, salt and pepper.  Pour gently into flan case.
  5. Bake in a pre-heated oven 375°F/ 190°C/ Gas 5 for approx. 30 minutes or until golden brown and set.
  6. Serve hot or cold with a green Salad.
