2350g / 12oz Odlums Coarse Wholemeal
225g / 8oz Odlums Self Raising Flour
2 teaspoons Baking Powder
1 tablespoon Sugar
2 Red Onions (finely chopped)
125g / 4oz grated Cheddar Cheese
2 Eating apples, peeled and grated
Salt & Pepper
175g / 6oz Margarine (melted and cooled)
2 large Eggs (beaten)
1-2 teaspoons Wholegrain Mustard (to taste)
300ml / 1/2 pt Milk


  1. Preheat oven to 190°C/375°F/Gas 5. Lightly grease 12 deep muffin tins and sprinkle with a little flour or use paper cases to line tins instead.
  2. Mix flours, baking powder, sugar, red onions, cheese, grated apples, salt and pepper together in a large bowl.
  3. Make a well in the centre and add the melted margarine, beaten eggs, mustard and milk. Mix gently with a spoon until just combined. Do not beat!
  4. Transfer to prepared muffin tin and bake for 20 to25 minute, until golden brown and firm to the touch. Cool on a wire tray.
  5. Serve with soup.
