What you need:

  • 60g/2oz         Coconut Flour
  • ½ tsp              Baking soda
  • ½ tsp              Salt
  • 2 tsp                Cinnamon
  • ½ tsp              Nutmeg
  • 1                       Courgette
  • 4 eggs
  • 3 tbsp              Honey
  • 1                      Ripe banana mashed
  • 1 Tbsp            Coconut oil
  • 1 tsp                Lemon juice
  • 50g/1.7oz       Toasted chopped hazelnuts

How to:

  1. Pre-heat the oven to 180C/350F/Gas 4
  2. Oil the loaf tin and line with parchment, set aside.
  3. Grate the courgette and squeeze out as much liquid as possible
  4. In a large bowl mix the banana with the egg, honey, lemon juice and coconut oil.
  5. Sift the flour with the baking soda, spices and salt, add the courgette and the chopped nuts.
  6. Add the wet ingredients to the dry ingredients and stir well, pour the batter into the prepared loaf tin and bake for 45-50 minutes until a skewer inserted into the loaf comes out clean.

Cooks Tips!  Great with a Lemon Cream Cheese Icing on the  top and some extra chopped nuts for decoration and toasted coconut.
