What you need:

  • 225g/8oz Odlums Coarse Wholemeal Flour 
  • 1 tablespoon Shamrock Light Muscovado Sugar
  • 1 Egg
  • 150ml/¼ pint Natural Yoghurt
  • 3-5 tablespoons Rowse Honey
  • 3 tablespoons Oil
  • 1 level teaspoon Bread Soda
  • 1 level teaspoon Goodall’s Cinnamon
  • 100g packet Shamrock Chopped or Flaked Almonds (optional)

How to:

  1. Preheat oven to 150°C/300°F/Gas 2. Grease and line 450g/1lb loaf tin.
  2. Beat together the sugar, egg, yoghurt, honey and oil.
  3. Add wheatmeal, bread soda, cinnamon and half the nuts to the liquid ingredients.
  4. Beat well until all ingredients are blended.
  5. Transfer to the prepared tin. Level off top with back of spoon. Sprinkle remaining nuts on top.
  6. Bake for about 45 mins until springy to the touch.
  7. Cool in the tin. When cold, wrap in greaseproof paper and tinfoil.
