Yule Log

What you need:
- 125g Odlums Cream Plain Super Flour
- 4 Eggs separated
- Pinch of Salt
- 125g Shamrock Golden Caster Sugar
- 2 tbsp Cocoa Powder
- 1 level tsp of Odlums Baking Powder
- Icing
- 125g Butter at room temp
- 200g Icing Sugar
- 2 tbsp Cocoa powder sieved
- Filling
- 250ml Double Cream (whipped)
- Grated White Chocolate to decorate
How to:
- Preheat the oven to 200°C.
- In a large bowl whisk the egg white until you reach soft peaks. Add the caster sugar in slowly until you can hold it over your head without it dropping. Beat in the egg yolks. Sieve together the dry ingredients and then fold into the egg mixture.
- Place onto a lined baking tray and then bake for 10 minutes.
- Lay a sheet of greaseproof paper dusted with caster sugar on the work surface. When the cake is baked, turn it onto the paper, remove the lining paper, and trim the edges with a sharp knife. Roll the cake up from its longest edge with the paper inside. Leave to cool.
- While the cake is cooling you can make the frosting by just whisking all the ingredients together in a large bowl.
- Spread the cream into the middle of the Yule log by unrolling and spreading it evenly.
- Now lay on the frosting and spread evenly with a spatula. Now mark with a fork and finish with some grated white chocolate. Enjoy.
