2 tablespoons Golden Syrup
Rind of 1 Lemon
3 Ripe Pears (peeled, cored and quartered)
150g/5oz Odlums Self Raising Flour
125g/4oz Butter (room temperature)
125g/4oz Light Brown Sugar
- Preheat oven to 170°C/325°F/Gas 3. Lightly grease a 20cms/8″ cake tin or casserole dish.
- Spoon the syrup over the base of the tin or dish, sprinkle over the lemon rind. Scatter over the blackberries and pears, cut side up.
- Put all the ingredients for the topping into a bowl and beat until smooth. Spoon mixture over the fruit and level the top.
- Bake for about 40 minutes until risen and golden brown. Cool in tin for about 10 minutes then turn out and serve with custard, cream or ice cream.
