Ingredients:

150g/5oz Tritamyl Gluten Free Flour
225g/8oz Butter (room temperature)
225g/8oz Caster Sugar
100g Packet Shamrock Ground Almonds
125g/4oz Dried Apricots (finely chopped)
3 Eggs
Juice of 1 Lemon

Method:

  1. Preheat oven to 180°C/350°F/ Gas 4. Grease a 23cms/9″ deep flan dish.
  2. Put all the ingredients into a large mixing bowl and using the all in one method, beat together until mixture is smooth.
  3. Transfer to prepared dish and bake for about 50 minutes until firm to the touch when gently touched.
  4. Dust with icing sugar and serve either hot or cold with whipped cream or crème fraiche.
