500g/1lb Odlums Cream Plain Flour

2 Tablespoons Treacle

7 fl.oz Milk (approx)

2 Tablespoons Sugar

1 teaspoon Cream of Tarter

1 teaspoon Bread Soda.

Good Pinch Ground Ginger

125g/4oz Shamrock Sultanas


  1. Preheat oven to 200°C/400°F/Gas 6. Lightly dust a cake tin or flat baking sheet with flour.
  2. Heat the treacle and milk over a low heat. Mix all the dry ingredients together in a bowl.
  3. Add sufficient liquid to mix to a soft dough. Turn onto a floured surface and lightly knead. Shape into a round and place in prepared tin, make a cross on the top of dough.
  4. Place into preheated oven and bake for about 40 minutes. Wrap in a clean tea towel until cold.
