Energy Bars

Cook Time: 30 minutes

What you need

  • 135g Odlums plain flour
  • ½ Odlums tsp baking soda
  • 2 very ripe bananas
  • 150g soft light brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp salt
  • 200g sliced almonds
  • 100g raisins
  • 100g sultanas
  • 100g glacé cherries, roughly chopped

Recipe Steps

  1. Pre-heat oven to 180°C / 160°C fan assisted and line a 33x23cm (13x9inch) baking tin with parchment paper.
  2. Beat the bananas and sugar together in a medium sized bowl until the bananas are mostly smooth.
  3. Add the egg and vanilla and beat to combine.
  4. Whisk together the flour, cinnamon, baking soda and salt in a small bowl, then add to the wet ingredients and stir to combine.
  5. Add the sliced almonds and fruits and mix together. The batter will be very thick.
  6. Spoon mixture into the prepared baking tin then spread out in an even layer with a spatula or back of a large spoon.
  7. Bake in the pre-heated oven until a toothpick inserted comes out clean, about 30 minutes.
  8. Leave to cool completely in the tin on a wire rack. Once cooled, remove from the tin and peel away the parchment paper, then cut into bars with a bread knife.
