Recipe Steps
- Beat butter alone for 2–3 minutes until pale and fluffy. It will change from yellow to almost white. Don’t skip this. Use the whisk attachment.Â
- Add sifted icing sugar in, a few spoons at a time, on the lowest speed. Mix until fully combined before adding more.
- Add vanilla, salt, and warm cream. If too thick, add cream, one tablespoon at a time.
- Turn to high and whip for 2–3 minutes until light, fluffy, and bright white. This is where the magic happens.
- For an ultra-smooth finish: switch to the paddle, lowest speed, 10–15 minutes. Pushes out air bubbles and gives a velvety, professional result.

THE GOLDEN RULESÂ
01 Your butter is everything.
Soft enough to press a finger in easily — not cold, not melted. When in doubt, leave it out for an hour.
02 — Beat butter first, before anything else.
2–3 minutes alone until pale and fluffy. It will change colour. Don’t skip it, don’t rush it.
03 — Add sugar slowly. One cup at a time.
All at once = sugar cloud and uneven mixing. Patience here pays off.
04 — Scrape your bowl. Every single time.
Butter hiding at the bottom won’t mix itself. Stop, scrape, mix again. Hidden lumps ruin everything.
05 — Use your cream warm, not cold.
Cold cream can make butter seize and go grainy. Warm is best.
06 — The final whip is not optional.
High speed, 2–3 minutes. Paddle attachment if possible. Watch it turn lighter, fluffier, brighter white. Trust the process.
07- Too sweet. A pinch of salt. Too Yellow – not white. A tiny drop of purple food colouring on the tip of a cocktail stick. Counteracts the butter tone instantly.
