Blueberry & White Chocolate Buttermilk Pancakes

Cook Time: 30 Minutes

What you need

  • 1 mug of Odlums Self Raising Flour
  • 1 mug of buttermilk
  • 1 pinch of sea salt
  • 1 pinch of sugar
  • 200g blueberries
  • 200g white chocolate chips
  • 100g mascarpone cheese
  • Honey for drizzling
  • Butter for frying.

Recipe Steps

  1. In a large bowl mix together the buttermilk, Self Raising flour and salt with a whisk until well combined.
  2. Add in 100g of the white chocolate chips and 100g of the blueberries. Leave in the fridge for 30 minutes to rest.
  3. Heat a large non-stick pan on medium heat, add a teaspoon of butter and let it melt and then add two ladles full of pancake batter.
  4. Allow to cook for 2-3 minutes and then flip once it’s golden. Cook on the other side for another 2-3 minutes and then stack them on a plate.
  5. Melt the remaining white chocolate over a saucepan of boiling water or in the microwave.
  6. Add a good scoop of mascarpone cheese on top of the stacked pancakes, next drizzle the melted white chocolate, then drizzle some honey and finish with some of the remaining blueberries.
  7. Enjoy.
