Recipe Steps
- In a large bowl mix together the buttermilk, Self Raising flour and salt with a whisk until well combined.
- Add in 100g of the white chocolate chips and 100g of the blueberries. Leave in the fridge for 30 minutes to rest.
- Heat a large non-stick pan on medium heat, add a teaspoon of butter and let it melt and then add two ladles full of pancake batter.
- Allow to cook for 2-3 minutes and then flip once it’s golden. Cook on the other side for another 2-3 minutes and then stack them on a plate.
- Melt the remaining white chocolate over a saucepan of boiling water or in the microwave.
- Add a good scoop of mascarpone cheese on top of the stacked pancakes, next drizzle the melted white chocolate, then drizzle some honey and finish with some of the remaining blueberries.
- Enjoy.
