What you need
- 25g/1oz Coconut Flour
- Good pinch of Bread Soda
- Pinch of Salt
- 3 tablespoons Coconut Milk
- 2 tablespoons Coconut Oil, melted & cooled
- 3 Eggs
- 2 tablespoons Rowse Honey
- 1 capful Goodall’s Vanilla Extract
To Serve
- Buckwud Maple Syrup
- Banana, sliced
- Shamrock Pecan Nuts, toasted
To Fry
- Knob of Coconut Oil

Recipe Steps
- Mix eggs, coconut oil and honey together. Add the coconut milk and vanilla extract, then add the flour, bread soda and salt.
- Gently mix (don’t over mix), stand for a few minutes while heating the pan and it will thicken a little.
- Melt a dab of coconut oil in a pan (don’t let it get too hot). Drop large spoonfuls of batter onto the pan.
- When browned on base, gently turn (be very gentle) and brown on the other side.
- Serve warm with maple syrup, sliced banana and toasted pecans.
