Elderflower & Pistachio Cake

What you need:
125g soft margarine
125g Greek yoghurt
200g light soft brown sugar
100mls elderflower cordial
50mls elderflower cordial ( drizzling on top )
225g Odlums Self-Raising Flour
1.5 tsp baking powder
3 eggs
100 - 150g pistachio nuts ( de-shelled weight )
Optional: 1 tsp vanilla paste
Elderflower Icing Glaze
350g icing sugar
75g real butter (softened)
50g Greek yoghurt
A few tbsp elderflower cordial
Garnish
Sprigs of elderflowers
50g pistachios ( shelled )
How to:
Notes:
This cake is best served immediately on the day of baking. As the icing contains Greek yogurt the cake will need to be refrigerated if not eaten on the day.
Elderflower cordial can be replaced with the juice and zest of 1 lime or lemon in the cake and the 2 tsp juice in the icing.
