Mini Egg Cookie Nests

Cook Time: 15-20 minutes

What you need

  • 215 g Odlums cream plain flour
  • ½ tsp Odlums baking powder
  • 100 g unsalted butter (softened)
  • 100 g caster sugar
  • 65 g light brown soft sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ¼ tsp bicarbonate of soda
  • ¼ tsp salt
  • 100 g milk chocolate chips
  • 1 pack of Poppets Poppeggs
  • 110 g melted chocolate

Recipe Steps

  1. Preheat oven to 175°C.
  2. Add caster sugar, brown sugar and softened butter to a mixing bowl. Mix with an electric whisk or blitzer.
  3. Add the egg and vanilla extract. Mix again.
  4. Add Odlums plain flour, Odlums baking powder, bicarbonate of soda and salt. Mix until combined.
  5. Add chocolate chips and mix.
  6. Spoon mixture into cookie moulds lined with small strips of baking paper (as per video).
  7. Press a utensil into the centre of each to create a cup shape.
  8. Bake for 15-20 minutes until golden brown.
  9. Once baked, reshape the centres using a utensil if needed.
  10. Leave to cool in the mould to avoid breakage.
  11. Fill each cookie cup with melted chocolate.
  12. Top with Poppets Poppeggs.
