Gluten Free Apricot and Almond Dessert

What you need

  • 150g/5oz Odlums Tritamyl Gluten Free Flour
  • 225g/8oz Butter (room temperature)
  • 225g/8oz Odlums Golden Caster Sugar
  • 100g Packet Shamrock Ground Almonds
  • 125g/4oz Shamrock Apricots (finely chopped)
  • 3 Eggs
  • Juice of 1 Lemon

Recipe Steps

  1. Preheat oven to 180�C/350�F/ Gas 4. Grease a 23cms/9″ deep flan dish.
  2. Put all the Ingredients into a large mixing bowl and using the all in one Method, beat together until mixture is smooth.
  3. Transfer to prepared dish and bake for about 50 minutes until firm to the touch when gently touched.
  4. Dust with icing sugar and serve either hot or cold with whipped cream or cr̬me fraiche.
