Recipe Steps
- Start by making the biscuit. Add the butter and sugar into the mixer and beat until pale and fluffy. Combine in the egg and Odlums flour and then wrap in clingfilm to chill for an hour in the fridge.
- Roll out the biscuits and cut into rectangular shapes with your knife and bake on nonstick at 180C for 10-12mins.
- Make the meringue by adding all the ingredients to a bowl and whisking over a saucepan of simmering water for 8-10mins until thickened.
- Assemble the Mikados by piping on two lines of the meringue, sprinkle on the desiccated coconut and followed by a piping of the jam in the centre. Enjoy.
