Mini Egg Banana Bread

Cook Time: 60-70 minutes

What you need

  • 250g Odlums plain flour
  • 225 g butter, softened
  • 100 g caster sugar
  • 100 g light brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp bicarbonate of soda
  • 1/4 tsp salt
  • 4 bananas
  • 250 g Poppets Poppeggs (plus extra for decoration)
  • Chocolate chips (¼ cup)
  • 100 g Dairy Milk chocolate bar (chopped, reserve ¼ for drizzle)

Recipe Steps

  1. Preheat oven to 160°C.
  2. Add softened butter, caster sugar and brown sugar to a mixing bowl. Mix with a spatula or whisk.
  3. Add eggs and vanilla extract. Mix well.
  4. Add salt, baking powder and flour. Mix until combined.
  5. Add bananas and mix.
  6. Add Poppeggs, chocolate chips and chopped chocolate (keeping ¼ of Poppeggs & chopped chocolate for topping). Mix gently.
  7. Pour mixture into a lined loaf tin.
  8. Bake for 60-70 minutes, or until a knife comes out almost clean.
  9. Top with extra Poppeggs.
  10. Cool for 10 mins.
  11. Drizzle with melted chocolate once set.
