Recipe Steps
- Preheat the oven to 180oC and line a baking tray with parchment paper.
- Add the butter and brown sugar into a large bowl and beat with your electric mixer until smooth and combined nicely.
- Add the two eggs one at a time beating in between to incorporate them.
- Now add the flour, cocoa powder, and white chocolate, and using a wooden spoon or spatula beat them in to form the cookie dough.
- Place tablespoonfuls of the dough onto the lined baking tray in nice mounds and smooth them out nicely. In each mound using a wet spoon make a grove in the middle.
- Add a teaspoon of peanut butter into the middle of each cookie and fill over it with some extra cookie dough. Smooth the stuffed cookies out again with a wet spoon and then back for 15 mins. Allow cooling slightly before enjoying.
