Peanut Butter and White Chocolate Stuffed Cookies

What you need

  • 220g butter at room temperature
  • 220g brown sugar
  • 400g Kelkin peanut butter
  • 2 eggs
  • 250g Odlums Self Raising Super Flour
  • 4 tsp cocoa powder
  • 120g white chocolate chips
  • Sea salt

Recipe Steps

  1. Preheat the oven to 180oC and line a baking tray with parchment paper.
  2. Add the butter and brown sugar into a large bowl and beat with your electric mixer until smooth and combined nicely.
  3. Add the two eggs one at a time beating in between to incorporate them.
  4. Now add the flour, cocoa powder, and white chocolate, and using a wooden spoon or spatula beat them in to form the cookie dough.
  5. Place tablespoonfuls of the dough onto the lined baking tray in nice mounds and smooth them out nicely. In each mound using a wet spoon make a grove in the middle.
  6. Add a teaspoon of peanut butter into the middle of each cookie and fill over it with some extra cookie dough. Smooth the stuffed cookies out again with a wet spoon and then back for 15 mins. Allow cooling slightly before enjoying.
