Recipe Steps
- Process the dates in the food processor until they start to break down, add the banana and pulse until it is combined.
- Add the coconut flour and again pulse two or three times, do the same with the peanut butter and vanilla, be sure not to over pulse the mixture, you want it to stay together to form into balls.
- Turn the paste out onto a board and form into about 24 even sized balls, rolling each one in the desiccated coconut. Set them on a plate and refrigerate, use with 4 days.
Great snacks /lunchbox fillers for the kids. These balls can also be frozen and taken out a few at a time.
