Brown Sesame Loaf

What you need

  • 450g/1lb Odlums Coarse Wholemeal Flour
  • 1 level teaspoon Bread Soda
  • 25g/1 oz Sesame Seeds
  • 1 tablespoon Honey or 1 tablespoon Brown Sugar (optional)
  • 300ml/½pt Milk
  • 1 Egg
  • 125g carton Natural Yoghurt
  • 1 tablespoon Oil
  • Extra Sesame Seeds, for dusting

Recipe Steps

  1. Preheat oven to 170°C/325°F/Gas 3. Grease a 900g/2lb loaf tin.
  2. Place wholemeal flour or wheatmeal in a large mixing bowl.
  3. Sieve in bread soda. Add the sesame seeds and mix well. If using brown sugar, add this now.
  4. Beat together the honey (if using), milk, egg, yoghurt and oil. This can be done in a large jug.
  5. Add liquid ingredients to dry ingredients and stir until well combined.
  6. Transfer to loaf tin. Make a cut down the centre of loaf and sprinkle with sesame seeds.
  7. Bake in preheated oven for approx 1 hour. Bread will be baked if base sounds hollow when tapped.
  8. Cool on a wire tray. For a soft crust, wrap bread in a clean tea towel.
