Recipe Steps
- Pre-heat oven to 180°C / 160°C fan assisted and line a 33x23cm (13x9inch) baking tin with parchment paper.
- Beat the bananas and sugar together in a medium sized bowl until the bananas are mostly smooth.
- Add the egg and vanilla and beat to combine.
- Whisk together the flour, cinnamon, baking soda and salt in a small bowl, then add to the wet ingredients and stir to combine.
- Add the sliced almonds and fruits and mix together. The batter will be very thick.
- Spoon mixture into the prepared baking tin then spread out in an even layer with a spatula or back of a large spoon.
- Bake in the pre-heated oven until a toothpick inserted comes out clean, about 30 minutes.
- Leave to cool completely in the tin on a wire rack. Once cooled, remove from the tin and peel away the parchment paper, then cut into bars with a bread knife.
