Tortilla Wraps – Served 3 Ways

How to:
To make the Tortillas
In a large bowl mix all the ingredients together with a spoon until they all combine into a dough.
Place it out onto a floured surface and combine the dough until it is nice and smooth.
Divide the dough into 6 portions and roll them into balls. Flour the surface and with a rolling pin roll the dough balls out as thinly as possible. They should make rounds about 20cm wide.
Heat a large frying pan on medium to high heat. Cook the tortillas for 1-2 mins on each side until golden brown and toasted. Divide them among pieces of parchment paper, ready for whatever dish you fancy.
Spicy Bean & Guacamole Quesadilla
Make the guacamole by slicing the chillies, dicing the tomatoes, and mashing the avocados, combine all into a bowl and mix with lime juice and salt and pepper.
Add to a bowl 4 tablespoons of the beans and a handful of grated cheddar.
Place down one wrap onto a board and add the bean and cheese filling spreading it all over. Add another wrap on top.
Heat the frying pan on medium heat and cook the filled wrap for 3 minutes on each side. Slice it up and serve with the guacamole. Enjoy.
Halloumi wraps
Firstly start by cutting up the cheese into nice-sized goujons or fingers. Place them into the flour, then into the egg wash, and finally in the breadcrumbs to coat.
Heat vegetable oil on medium heat and shallow fry the halloumi bites until golden all over. Drain them onto some kitchen paper and now assemble your wrap. Add in the Chef relish, next to the crispy halloumi, and finally finish with some rocket and lime juice.

Preheat the oven to 180C.
Place the wrap down onto a non-stick tray and spread it on the tomato passata. Top the wrap pizza with the cheese and then bake for 4-5 minutes. Enjoy.
